Who needs to waste their time and money at big chain coffee shops eating their egg bites when you can make your own at home? These egg bits cost a fraction of the other guys and are super easy to make.
Makes about 18 bites. Prep time: 10 min. Cook time: 20-30 min.
INGREDIENTS
5 whole eggs
1 C cottage cheese
shredded cheddar cheese
salt
pepper
DIRECTIONS
Preheat oven to 350*. Spray or line 2 muffin tins (9"x9" option listed below). I like using the reusable liners.
Put the 5 eggs and 1 C of cottage cheese into a blender and blend until smooth.
Pour the mixture into the muffin tins. Do not fill them more than 3/4 full.
Sprinkle with salt and pepper (I don't put them in the blender anymore because they easily settle to the bottom)
Sprinkle shredded cheddar cheese on top.
Bake for 20-30 minutes. The tops should be slightly brown. You can check with a toothpick too.
Let them cool before removing them.
They can be stored in the fridge in an airtight container for up to 5 days.
You can also pour the mixture in a 9"x9" greased pan. Sprinkle with salt, pepper, and cheddar cheese. Bake for 20-30 minutes. I would bake these about 5 minutes longer than when you use the muffin tins.
