This is an easy no-bake pie. Got littles? They can help you make this. It makes one 9" pie pan. Takes 15 minutes to prepare and 4 hours minimum of chilling time.
Ingredients:
Graham Cracker Crust:
10 Graham Crackers
2 Tbsp melted butter
Pie Filling:
1.5 Cups eggnog (the creamier the better)
1 3.4 ounce package of vanilla pudding (instant, not stove top)
2 cups Cool Whip (not lite)
dash of nutmeg (optional)
Directions:
Grab your 9 inch pie pan. Take your 10 Graham Crackers (we are talking the whole sheet, don't break it up). You can either put them in a large Ziplock bag and crush them with a rolling pin or put them in a food processor. You want Graham Cracker crumbs. Add the 2 Tbsp of melted butter and mix well. Once mixed, press into the bottom and sides of the pie pan.
In a medium bowl, mix the eggnog and pudding. You can use a whish and beat it by hand, but I don't doing recommend that unless you have to. If you have a hand mixer, that works beautifully and won't cause a cramp in your arm later. You want to mix until it is thick. Once there, fold in the cheese, David... I mean the Cool Whip. You can add your dash of nutmeg here.
When all the ingredients are mixed, add to the Graham Cracker crust and put it in the fridge for at least 4 hours. Overnight is better.
Options:
You can use a standard pie crust if you prefer. Even a frozen one works.
You can add 2 tsp of sugar to the pie crust. I don't feel its needed as there is already enough sugar in the filling.
Make sure pie is firm before cutting and serving.
